If the verbal responses are more of an explanation on how they approach their work, than an accommodation of your desires, it might be time to walk away.

If your interview is less a discussion of merits, and more a description of how their process works – be cautious. However, be aware that some builders employ a format that streamlines the job progress, thus reducing the costs. If you are willing to comply with their procedure, it could work and be a good fit.
